Step into this Puerto Vallarta landmark restaurant’s kitchen on any given evening, if you dare, and you can’t help wondering how can such amazing food emerge from a place that seems so chaotic at first glance. And when you take into account that the kitchen seems minuscule when compared to Daiquiri Dick’s seating area, imagining what the workload must be like, say, on Thanksgiving or New Years’ Eve seems completely unfathomable. I had been allowed the privilege of exiting the restaurant through the service entrance—which requires walking through the kitchen—several times before and was always intrigued about the space but more importantly, the people that make it all happen. Armed with my trusty Nikon 50mm f/1.8 lens, ideal for any low-light situation, and cranking up the ISO to 1200 on my D70 (I wanted to rely on available light only), I asked to take a closer look.

What I discovered is that what seems like complete chaos is in fact a beautiful, tightly-choreographed dance in which all participants know exactly what to do and where to be at any given moment. Watching ringmaster/chef Ignacio Uribe and his team in action for the 10 minutes or-so I spent in the kitchen while trying to avoid being trampled over gave me a renewed sense of appreciation of the magic that goes on behind the scenes at this favorite restaurant.
